Vinegar
Vinegar is the unsung hero of the Shrubs and Oxymels. Vinegar contains polyphenols, which are plant chemicals that have an antioxidant effect that may protect cells from oxidative stress, a possible stimulator of tumor growth. Cell and mouse studies suggest that vinegar may prevent the growth of cancer cells or cause tumor cells to die.
Apple Cider Vinegar is used in the Shrubs – Vinegar increases acidity in the gut to help aid nutrient absorption. It also helps preserve the benefits of fruits like citrus, and was used by sailors to prevent scurvy. Sour-tasting beverages such as vinegar can also stimulate salivation, preventing dry-mouth in immunocompromised individuals.
